Richard Sax has left a wonderful legacy of recipes. He also includes original recipes from as early as the 17th century as intriguing and sometimes amusing sidebars. No recipe in this exceedingly large (and relatively heavy) cookbook is beyond a decent home cook. There are relatively few pieces of special equipment required, and the recipes are not fussy or demanding. Some of them may not be the prettiest ones on the dessert table, but they will probably be the ones that disappear first. I agree with the title,this is a classic. I purchased this when it was initially published years ago. See that picture on the cover? That is the Chocolate Cloud Cake and worth the price of the book. It is my go to dessert for entertaining, it's easy and best done ahead of time (in fact you must do it ahead.) Guests always love it and want the recipe, so this newly purchased copy and the spring form pan needed to make it was a Christmas gift for one of those guests. She loved them! I can also highly recommend the Current Orange Pound Cake, it's a Christmas staple in our house, we top it with chocolate ganache (that isn't called for in the recipe, but IMHO it's worth it.)

This book has never let me down, and when I make dessert I start here. One of the things I appreciate about it is it isn't fussy. The desserts are easily executed and delicious. There is definitely an old world slant to it, in that he is something of a dessert historian. However, the recipes aren't sacred, since he will add things if he thinks they'll be improved. And they usually are.

The historical notes are fascinating and sometimes comical. The emphasis is on American recipes, however, "American" means that a lot of them come from somewhere else. So there are other desserts from other cultures, but usually seen through an American lens.

Overall, I'd say this book has more of a "yankee" slant, but that might have more to do with the fact that the Pennsylvania Dutch were such masters of dessert. At the same time, I've never had any complaints about the amazing sweet potato pie recipe. The Maine Maple Pie recipe was a revelation, like what pecan pie wishes it could be. The pumpkin pie recipe is also a consistent winner.

Another thing I appreciate about these recipes is they aren't too sweet. Yes, they are desserts, but the recipes hearken back a time when sugar wasn't so abundant and ubiquitous. These are balanced recipes.

I've had this cookbook now for about 12 years and every time I take it off the shelf and flip through it, I'll find something else I want to try or haven't heard of. If you are a dessert lover, this is a must-have and I can't recommend it highly enough.

This cookbook has established some of its recipes as beloved classics for my family (hottendots, ginger cake, chocolate cloud cake, pecan pie made with cane syrup, a cookie we have renamed lumpies). Well-written and engaging, these recipes were tested well enough that they adapt easily to altitude and individual preferences.

I'm so glad I bought this book. I saw this book mentioned in some classic cookbook lists and decided to try it. I spent the weekend reading this like a novel. There are so many great dessert ideas and notes on the recipes. Some are familiar and some are new to me, but I can't imagine that I won't have fun with this book. I just received it so I haven't made anything yet, but I have more than a dozen sticky tabs marking the pages so I can quickly find the ones I want to try soon. In fact, even though it is too hot, I think I may need to bake something tonight.

One of my favorite books on desserts.
Lots of anecdotes, historic references, not just great recipes, but a fascinating read.
You've got to appreciate the fact that this book was researched and written before there was a Yahoo, or a Google to turn too, so imagine the work that went into the compiling the recipes.
It didn't win a James Beard award for nothing.

I will never try but that is pretty much with every cookbook. It is all about the likes and
dislikes of people. I would recommend this book.

AWESOME book. I got a version from 2010 (used), which is a little different from the original publication in 1994. I was worried some recipes are missing (and still suspect this is the case), but have also found (great) recipes in my version that *aren't* in the original (try the "All-Time-Best Summer Torte").
Beautiful book design, easy to read recipes, great photos. And author narrative about each recipe is fun to read.
