Vegetarian Express claims that each of its recipes can be prepared in 28 minutes or less. If preparation time sometimes stretches to 40 minutes on a few of the more complicated recipes, it hardly matters, for you end up with an extraordinarily delicious, low-fat meal in as much time as it takes for the local pizza place to deliver one of its greasy pies. This book was written with busy people in mind: folks who like to eat well but don't have the time to spend steaming, blanching, soaking, and simmering after a full day of work. I recommend this book for anyone who needs to cook easy,healthy meals or needs some inspiration. For a vegetarian none of the recipes or ingredients are new or innovative. To a non-vegetarian this book offers a nice simple introduction to a few ingredients not normally used such as tofu and TVP.

Easy, Tasty-For Real. This is the first book that is truly EASY and, so far, the recipes I made have been really tasty. This is great for families and people with small kids who want nutritious meals FAST. I have a two-year-old and I can prepare an entire dinner while she watches a 30 minute video. The recipes have even been "approved" and enjoyed by my non-vegetarian husband, which is more than I can say for any of the complicated ones I labored over from my Vegetarian Times magazine. I have enjoyed this cookbook and I am not a vegetarian. The format is a little different from other more traditional cookbooks, a menu is given then the recipes, and then a shopping list. The authors try to offer easy, quick recipes for the busy home cook, and I think they succeed. Personally I like the menu ideas provided and have found the recipes easy and tasty. The recipes are all very healthful, low fat, low salt, and lots of fresh fruits & veggies.A person with limited cooking skills can easily use this cookbook because the recipes are very basic. I can understand other reviewers commenting on recipe blandness. The recipes use almost no processed ingredients and almost no salt. There are no pictures but I don't feel it hurts the book in any way. I recommend this book for anyone who needs to cook easy,healthy meals or needs some inspiration. For a vegetarian none of the recipes or ingredients are new or innovative. To a non-vegetarian this book offers a nice simple introduction to a few ingredients not normally used such as tofu and TVP. A few recipes I enjoyed: cinnamon-apple glazed baby carrots, simple sesame-soy oriental noodles, broccoli, carrot, and cashew stir-fry with tofu, basic bean burritos, and golden rice.

I bought this and a slew of other vegetarian books from amazon all in one trip. This is one of the first one that I've read and it it truly worth it. Yes, I found the recipes I've made so far to be tasty, easy and taking 28 minutes or less. If you're into past dishes, there are plenty of them in this book.
Overall, this is a great book for vegetarians. I'm enjoying it.

This is a really good book for fast and easy recipes. I have made 1/2 dozen all ready and they all came out delicious. Also it isn't for large numbers of people, which helps because I am cooking for one. I am sure you could double the recipes if you were cooking for more than four or so. Great book, I really love it!

Loooove this cookbook!! I use it on average once per week, and have been for three years now. The recipes are fast, easy, and delicious. I have never gone wrong with anything I've made from here. One thing that drives me nuts are veg cookbooks that assume that you like to use/eat gourmet ingredients. We're a family of four, on a budget, with young kids, and I'm the only vegetarian, though that's all we eat when I'm cooking: we're going for whatever I can buy at the local suburban grocery store. Many thanks, Nava Atlas! I have recommended your book to a number of friends and they all love it, too.

I LOVE this cookbook! I was somewhat apprehensive about purchasing a cookbook that uses so many "convenience" foods (canned beans, frozen/canned veggies) but I was very pleasantly surprised. I use fresh foods most of the time and the canned/frozen ones as a backup so it's really up to you. I have only made about a dozen or so of the recipes so far, since I just recently purchased the book, but they have all been fantastic. I have never gotten so excited about a cookbook before and Im not the best cook in the world so this has been a godsend! The recipes are really that quick too!

Recipes are quick to make. As a new vegetarian I appreciate the combinations described for creating a complete meal. I plan to try all or nearly all the recipes in the book. They all look good. The ones I've tried so far were good.
