Celebrating Cupcakes and Muffins (Leisure Arts #4832) (Celebrating Cookbooks) by Michal Moses

Paperback: 144 pages. Publisher: Leisure Arts, Inc. (September 1, 2009). Spinach and Ricotta cheese muffins - These are pretty tasty, although a little dry if not eaten right after baking. Pesto Muffins - These are really good, but they are basically the same as the bacon recipe just with Pesto folded into the batter instead of bacon and olives. Super Bowl Cupcakes - Whatever you do, use a good peanut butter. These are unique and really great.

Pour candy in bottom of each ice cream cone; then place inverted cupcakes on top so that the frosted side touches the top of the cone. 6. It's a nice book of recipes, but I prefer to bring photo for each recipe, and this not the case... I tried a couple of recipes and it works... it's not a decoration book either... :(

I bought this because I was getting tired of always using a mix for the cupcakes I make. It's a nice book as a starter or if you are a casual baker who doesn't have a library of baking-based cook books.

So far the savory muffins are the best recipies, but I am not sure they are worth the price of the book. Here are the things I have so far baked and my thoughts-

Banana Walnut Cupcakes - Recipe says they make 12 but it easily makes 24. These were very good, rich, not fluffy. The recipe suggested a toffee glaze, but me and my family agreed they didn't need any topping.

Orange Cupcakes - These were disappointing. The recipe says it makes 12 and does make 12. I had to find a good icing recipe online as there's not a recipe for orange icing to go with them. I thought they were edible, but underwhelming considering how long I spent grating zest.

Devil's Food - Again recipe said it made 12 but made 24. This is one of the first handful of basic recipes. I didn't care for these. They were dry and flavorless. I prefer a moist cake especially with chocolate.

Bacon, Olive, and Thyme muffins - I have made these a few times now and they are fantastic. In fact they're even good again when you reheat them in the microwaive. Very fluffy and great for breakfast.

Also I suggest using powdered sugar instead of granulated when making the frosting.

There are no new cupcake or frosting recipes in this cookbook, they are all very basic and readily available in any other cake or cupcake cookbook. But the muffin recipes are delightful. I made the Berry Berry Muffins in mini loaf pans and shared them with work associates who couldn't stop raving over them. As with anything you bake, you have to pay attention to details and keep an eye on the oven, but just following your nose and using common sense will yield more than acceptable results. I'd recommend any of the recipes to any novice baker and experienced bakers will find fresh inspiration in the recipes listed.

I was very disappointed in the recipes. The lemon poppy seed muffins were dry and tasteless and then it said to add royal icing as a glaze but when I made the royal icing recipe in the front of the book, it turned out to be an almost white frosting but very hard and tasteless. I threw away all of the muffins, they weren't even worthy of giving to someone. Also I made the carrot apple muffins. They were OK but for all the work that you had to go through, it just wasn't worth it. Yesterday I made the vanilla chocolate chip cupcakes and cream cheese frosting. The frosting was pretty basic but was disappointed in the cupcakes. They were dry and not much flavor. I bake a lot and am very precise so I followed the recipe to a T. The recipes seem easy enough but it is costly when they are terrible, I don't know if I want to try any more.
